Home-made granola recipe

The old me would have a white bun with goat cheese and apricot or blueberry jam for breakfast. Those days are over - for me, granola is one of the simplest ways of having an excellent breakfast. However, even organic granolas available still contain way too much sugar. At least for me. So along with my wife, we found a bunch of recipes on how to make granola at home. It turned out that it is so simple, and the best part is that now we are in control regarding how sweet we want it. So I thought I would share it here.

Ingredients

Three cups of organic rolled oats. We use Nature's Path, or organic rolled sprouted oats from One Degree Organic Foods

Half a cup of melted organic honey mixed with a few tablespoons of organic coconut oil. 

The other ingredients are all optional, but we use the following list: 

  • some organic sunflower seeds

  • organic pumpkin seeds

  • a few spoons of grounded flax seeds

  • some roughly chopped organic cashew nuts

  • some organic sesame seeds

  • shredded organic coconut

  • a few tablespoons of organic chia seeds and hemp seeds.

Instructions

Mix all well, add the melted honey coconut oil mixture, mix again and then pour onto a baking tray covered in parchment paper. Spread evenly to cover the entire tray. We use a regular tray that is 17" by 11". Preheat the oven to 234ºF, and—depending on your range—bake for 23 min or until golden brown. Let it cool, then break it with your hands into smaller chunks and place it in an airtight container. Initially, we added organic raisins, organic dry cherries and cranberries, but those burn easily. So, if desired, we add the raisins or dry fruits to the bowl before eating. Myself, I often add a few chopped organic dehydrated mangos, some goji berries and organic raisins to the bowl. 

Mix it with a few spoons of plant-based milk, or use organic apple sauce to elevate the taste, depending on preferences. Also, when using apple sauce, we got dry organic powdered blueberries, so before the granola is added to the bowl, I mix two teaspoons of organic apple sauce with half a teaspoon of blueberry powder.

I am unsure how long it can stay in the jar since our granola jar is empty after about a week. And the best part is - no sugar included.
